Sweet corn bites with a spicy Cajun kick and a touch of lemon pepper! Serve them with cool ranch dressing for an easy side dish or game-day snack. This homemade copycat is inspired by the restaurant favorite.
Ingredients
4 ears fresh corn, husks and silk removed 2 teaspoons Cajun seasoning, plus more to taste 1 teaspoon lemon pepper seasoning Vegetable or canola oil, for deep frying 1 tablespoon vegetable oil, for the air fryer method ½ cup ranch dressing, for dipping
Directions
Servings: 4 Prep time: 10 minutes Cook time: 5–7 minutes per batch for deep frying; 12–16 minutes for air frying. Prepare the Corn Rinse the corn and pat it completely dry. On a sturdy cutting board, carefully cut each cob crosswise into pieces about 2 inches long using a sharp, heavy knife. Mix the Cajun and lemon pepper seasonings in a small bowl. Deep Fryer Directions Add oil to a deep, heavy pot, filling it no more than halfway. Heat to 375°F, using a frying thermometer. Carefully lower a few dry corn pieces into the oil. Work in small batches to avoid overcrowding. Fry for 4–5 minutes, or until the kernels are lightly golden. If needed, cook another minute or two. Remove with a slotted spoon or frying strainer and drain briefly on paper towels. While still hot, place the corn in a large bowl, sprinkle with the seasoning mixture, and toss to coat. Start with half the seasoning, then add more to taste. Serve warm with ranch dressing. Air Fryer Directions Preheat the air fryer to 400°F. Toss the dried corn pieces with 1 tablespoon oil. Arrange in a single layer in the basket. Air fry for 12–16 minutes, turning halfway through, until tender with golden spots. Cooking time may vary by air fryer. Transfer the hot corn to a bowl and toss with the seasoning mixture to taste. Serve warm with ranch dressing. Marie’s Kitchen Tip Cajun and lemon pepper blends often contain salt, so taste before adding any extra. For a milder batch, start with 1 teaspoon Cajun seasoning and add more after cooking.
