Pretty cucumber and smoked salmon bites for parties and gatherings.
Ingredients
1 large English cucumber 4 ounces smoked salmon 4 ounces cream cheese, softened 1 tablespoon fresh dill, chopped 1 teaspoon lemon juice ½ teaspoon lemon zest ¼ teaspoon garlic powder Black pepper, to taste 1 tablespoon capers, optional Fresh dill or chives for garnish
Directions
Wash and dry the cucumber. Using a vegetable peeler or mandoline, slice it lengthwise into thin strips. Lay the cucumber strips on paper towels and gently pat them dry. In a small bowl, mix the softened cream cheese, dill, lemon juice, lemon zest, garlic powder, and black pepper. Spread a thin layer of the cream cheese mixture over each cucumber strip. Place a small piece of smoked salmon at one end of each strip. Add a few capers, if using. Roll the cucumber tightly around the salmon and cream cheese. Secure each roll with a toothpick if needed. Garnish with fresh dill or chives. Refrigerate until ready to serve. Serve chilled.
