Slow cooker potsticker soup is an easy, flavor-packed meal that combines dumplings in a broth. Using affordable ingredients like frozen potstickers, packaged coleslaw, and your favorite veggies, this simple recipe that feels like takeout in a bowl.
Ingredients
16 ounces frozen potstickers 12 ounces packaged coleslaw 1/2 cup onion, diced 2 garlic cloves, minced 4 ounces mushrooms, sliced 1/2 cup carrots, shredded or diced 1 cup spinach, chopped 4 cups low-sodium broth 1 1/2 cups water 1/2 cup low-sodium soy sauce 2 tablespoons rice vinegar 1 1/2 teaspoons ground ginger 1/2 teaspoon salt (or more) 1/4 teaspoon pepper
Directions
Add all the ingredients except the potstickers and spinach to the slow cooker. Stir to mix well. Cook on HIGH for 2 to 3 hours or LOW 4 to 6. Stir in the potstickers and cook and additional 10 to 15 minutes. Stir in the spinach before serving.
