A Big Easy chicken with rotisserie-style flavor and a bold homemade rub.

Ingredients

1 whole chicken, rinsed and patted dry
Non-stick spray

Rub:
3/4 cup kosher salt
1/4 cup paprika
1/4 cup onion powder
1/4 cup garlic powder
1/4 cup Italian seasoning
1/4 cup brown sugar
2 tablespoons dried thyme
2 tablespoons dry mustard
2 tablespoons cayenne pepper
2 tablespoons ground black pepper

Directions

Fire up the Big Easy.
Spray the basket with non-stick spray.
Combine rub ingredients and season the chicken well on all sides.
Lower the chicken into the Big Easy and cook until done, usually 15 to 20 minutes per pound.
Remove the chicken and let it rest 15 minutes before slicing.
