This quick easy Mexican Street corn recipe is extremely versatile. Adding new seasonings and flavorings is simple and allows you to create your very own version in a pinch!

Ingredients

4 ears of corn, husks removed
¼ cup sour cream
¼ cup mayonnaise
½ cup of cotija cheese, crumbled
2 cloves garlic, crushed
¼ tsp sea salt
1 lime, juice and zest
1/4 cup cilantro, finely chopped
½ tsp chipotle chili powder

Directions

Step 1. Preheat the grill to 400˚F. Place ears of corn onto your grill until grilled for about 12 minutes, turning around every few minutes to ensure even grilling on each side. Removing the outer part of the corn is recommended for this healthy easy Mexican Street Corn version to allow for a charred look and taste. It’s possible to cook your corn on the cob with its outer coating if you’re not a fan of charred corn.

Step 2. In a small bowl, mix together sour cream, mayonnaise, cotija cheese, garlic, lime zest and juice, and cilantro. Mixing all of your additional ingredients together first will allow for maximum flavor.

Step 3. Spread mixture evenly over each ear of corn, then sprinkle with chipotle chili powder. Top with extra cotija cheese and chopped cilantro and serve. You can add toppings as you like–some prefer more cheese and less cilantro. Get creative for a family friendly easy Mexican street corn that’s truly your own.
