
A creamy onion soup with chicken broth, Velveeta, white sauce and cheddar garnish.
Ingredients
2 cups yellow sweet onions, thinly sliced 2 tablespoons butter 1 can chicken broth 1/4 teaspoon salt 1/4 teaspoon fresh ground pepper 2 chicken bouillon cubes 1/4 cup Velveeta cheese, cubed 1 1/2 to 1 3/4 cups thick white sauce Shredded cheddar cheese for garnish White Sauce: 3 tablespoons butter 3 tablespoons flour 1/4 teaspoon salt 1 1/2 cups whole milk
Directions
Cook onions in butter over low to medium heat until soft and clear. Add chicken broth, bouillon, salt and pepper and heat through. Add white sauce and Velveeta. Simmer on medium-low until melted and blended, stirring often. Keep warm 30 to 45 minutes. For white sauce, melt butter, add flour, cook until thick, then slowly add milk and salt while stirring until thickened.
