A simple fresh topping bar using what you've already got on hand — onion, lettuce, sour cream, cheese, tomatoes, and spices.
Ingredients
2 medium tomatoes, diced 0.5 small white or yellow onion, finely diced 1 cups shredded lettuce 0.5 cups sour cream 1 cups shredded cheese (cheddar, jack, or queso fresco) 1 teaspoons chili powder or cumin 0.5 teaspoons salt 1 tablespoons lime juice (if you have it) or a splash of vinegar
Directions
1 Make quick pico: Mix 2 medium tomatoes, diced, 0.5 small white or yellow onion, finely diced, 0.5 teaspoons salt, and 1 tablespoons lime juice (if you have it) or a splash of vinegar in a bowl. Let it sit 10 minutes so the flavors come together. This becomes your fresh topping or dip. 2 Season the sour cream: Stir 1 teaspoons chili powder or cumin into 0.5 cups sour cream for a smoky-spiced crema. Thin slightly with a splash of water or milk if you want it drizzle-able. 3 Build your plate: Pile 1 cups shredded lettuce as a bed, lay flautas on top, then layer on the pico, drizzle the spiced crema, and finish with 1 cups shredded cheese (cheddar, jack, or queso fresco).
