Fresh cucumber, creamy herb-marinated feta cheese, juicy cherry tomatoes, and rich Kalamata olives stacked beautifully on a skewer for a refreshing Mediterranean-inspired appetizer. Light, colorful, healthy, and elegant!
Ingredients
1 large English cucumber 8 ounces feta cheese, cut into 12 cubes 12 cherry tomatoes 12 Kalamata olives, pitted 3 tablespoons olive oil 1 tablespoon red wine vinegar 1 clove garlic, minced 1 teaspoon dried oregano 1 teaspoon fresh parsley, chopped 1/4 teaspoon black pepper 12 appetizer skewers or cocktail picks
Directions
Wash the cucumber and cherry tomatoes. Cut the cucumber into 12 thick, bite-sized pieces. Cut the feta cheese into 12 equal cubes. In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, parsley, and black pepper. Add the feta cubes to the dressing and gently toss to coat. Let the feta marinate for about 15 minutes. Thread one cucumber piece, one feta cube, one cherry tomato, and one Kalamata olive onto each skewer. Arrange the skewers on a serving platter. Drizzle any remaining herb dressing over the skewers. Refrigerate until ready to serve. Prep Time: 15 minutes Marinating Time: 15 minutes Makes: 12 skewers
