Fresh summer salad, snack with chips, appetizer or a side for dinner!

Ingredients

16 oz – Frozen corn thawed or 2 1/2 cups fresh sweet corn. 

1/2 cups – Red onion chopped finely, or yellow for a milder onion flavor 

1 – Jalapeño, deseed the jalapeños before adding for the perfect amount of spice. 
Skip for less spice or substitute with green bell pepper for color.

1/2 cup – Freshly chopped Cilantro

1/2 teaspoon –  Sea Salt

1/2 teaspoons  – of both Lemon and Lime Juice freshly squeezed juice, 
but you can use juice that comes in a little bottle.  😎

Directions

Combine all ingredients in a bowl and toss.
Taste and season with additional salt, if needed.
Serve salsa as a snack with chips, appetizer or a side for dinner.
Store salsa in an air-tight container for up to 5 days in the fridge.
