2 tablespoons olive oil 1 medium onion, diced 2 carrots, sliced 2 celery stalks, sliced 3 cloves garlic, minced 8 cups chicken broth 3 cups cooked chicken, shredded or diced 1 teaspoon salt 1/2 teaspoon black pepper 1 teaspoon dried thyme 1 bay leaf 2 cups egg noodles 2 tablespoons fresh parsley, chopped
Directions
Step 1 โ Sautรฉ the Vegetables Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery. Cook for 5โ7 minutes, stirring occasionally, until vegetables begin to soften. Add garlic and cook for 1 minute. Step 2 โ Add Broth and Seasonings Pour in the chicken broth. Add salt, pepper, thyme, and bay leaf. Bring to a gentle boil. Step 3 โ Add Chicken Stir in the cooked chicken. Reduce heat and simmer for 15โ20 minutes. Step 4 โ Cook the Noodles Add egg noodles to the pot. Cook according to package directions, usually 6โ8 minutes, until tender. Step 5 โ Finish and Serve Remove the bay leaf. Stir in fresh parsley. Taste and adjust seasonings if needed. Serve hot with crackers, rolls, or crusty bread.
