Comfort Chicken Soup is a warm, hearty bowl of tender chicken, vegetables, and flavorful broth that soothes the soul and satisfies the appetite. Packed with carrots, celery, onions, and chunks of chicken, this classic homemade soup is perfect for chilly days, family dinners, or whenever you need a little comfort.

Ingredients

2 tablespoons olive oil
1 medium onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
8 cups chicken broth
3 cups cooked chicken, shredded or diced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 bay leaf
2 cups egg noodles
2 tablespoons fresh parsley, chopped

Directions

Step 1 – Sauté the Vegetables
Heat olive oil in a large soup pot over medium heat.
Add onion, carrots, and celery.
Cook for 5–7 minutes, stirring occasionally, until vegetables begin to soften.
Add garlic and cook for 1 minute.
Step 2 – Add Broth and Seasonings
Pour in the chicken broth.
Add salt, pepper, thyme, and bay leaf.
Bring to a gentle boil.
Step 3 – Add Chicken
Stir in the cooked chicken.
Reduce heat and simmer for 15–20 minutes.
Step 4 – Cook the Noodles
Add egg noodles to the pot.
Cook according to package directions, usually 6–8 minutes, until tender.
Step 5 – Finish and Serve
Remove the bay leaf.
Stir in fresh parsley.
Taste and adjust seasonings if needed.
Serve hot with crackers, rolls, or crusty bread.
