Ingredients
3 cups cooked, shredded or chopped chicken breast (2 to 3 breast). Salt and pepper to taste 2 1/2 quarts โ chicken broth season to taste 2 cups self-rising flour(Yes self-rising) 2 tablespoons โ soft butter. 1 cup milk(or buttermilk) Optional Seasoning and add ins. Sage(a little goes a long way) Garlic Finely cut or shredded Carrots Peas
Directions
Season chicken then bake or boil shred or chop Pour broth in a a large pot start warming. Combine flour, cold butter in a medium bowl butter should look like small pebbles. Add the milk. Mix well by hand. Do not use a mixer. Sprinkle your cutting board with flour, Place dough on the board and sprinkle the top of dough lightly with more flour, Roll the dough to about 1/4โ thick. Now use sharp knife or pizza cutter to cut dough into 1 to 1 1/2โ squares. Bring broth to a boil adding shredded chicken. Lightly dust your dumplings with a bit more flour. The extra flour is all gonna help keep them from sticking but will also thicken your chicken broth some as well when you add them to the pot. Begin adding dumplings one at a time stirring gently frequently while at a low boil. Allow dumplings to cook for about 15-20 minutes. You should notice your broth starting to thicken (from the extra flour) and your dumplings may start to sink a little to the bottom because they are soaking up the broth. Take one out and taste test it. It shouldnโt have a doughy taste anymore.
