Creamy, cheesy chicken and fettuccine with bacon, parmesan, spinach, tomatoes, and basil.

Ingredients

  • Kosher salt and freshly ground black pepper
  • 12 ounces fettuccine
  • 4 slices bacon, chopped
  • 1 pound chicken tenders, cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 4 plum tomatoes, chopped
  • 1 cup heavy cream
  • 5 ounces baby spinach
  • 3/4 cup grated Parmesan
  • 3 tablespoons chopped fresh basil

Directions

  1. Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions; drain.
  2. Cook bacon in a large cold skillet over medium-high heat until crispy. Transfer to a plate.
  3. Season chicken with salt and pepper. Cook in the skillet until golden and cooked through. Transfer with bacon.
  4. Reduce heat to medium. Add garlic, tomatoes, and cream. Simmer, then stir in spinach until wilted.
  5. Add bacon, chicken, fettuccine, and Parmesan. Toss well, season to taste, sprinkle with basil, and serve.
